Greek food makes use of a wide variety of delicious, natural ingredients including olive oil, fresh vegetables and herbs, raw grains, and a variety of meats. Plus, of course, feta cheese. With Greek food even a salad is a delicious delicacy, and here's a couple of recipes you can make in your own home!
The Classic Greek Salad
Ingredients
Feta cheese
Cucumber
Tomato
Oregano
Olive oil
Salt
Clean your tomatoes and cucumber and chop them up into suitable sizes for your salad. Grate up the cheese, and mix it all together. Season with oregano and salt, and add the olive oil to taste. Extra-virgin olive oil is great with these uncooked salads.
Okay, that was pretty basic, so let's try a mushroom salad this time!
Greek Mushroom salad
Ingredients
2 pounds of small mushrooms
2 fresh chives
1 tbsp of tomato sauce concentrate
1 herb mix (parsley, bay leaf, thyme)
1 clove of garlic
6 tbsp of oil
Large lemon
2 tbsp of raisins
1 glass of white wine
1 tbsp of coriander
Salt and pepper to taste
First off, scrub the mushrooms to clean them up, and dice them into medium sized slices. Extract the juice from the lemon and drip a few onto the mushrooms and drain them right away.
Now heat your oil in a pan, and when hot take some chopped chives and saute them for a few minutes. Next add the white wine, herbs, tomato, raisins, pepper and some lightly crushed coriander, and finally the remaining lemon juice. Cook at a high heat, covering it for 5 minutes as it cooks. Then add your mushroom slices, and allow to simmer for another 5 minutes, stirring as you go.
Add a bit more salt, stir and put in a serving bowl- but you'll need to leave it in the fridge for a few hours before serving. And of course, a few cubes of feta cheese as you serve. Delicious!
