Grade Rich

The coffee tradition of adding flavorings, spices and fruits to the beans has been well established for a very long time. The Arabs were among the first coffee drinkers who added spices such as cinnamon to their brew. Later on, they added other ingredients such as cardamom, ginger, clove, nutmeg, black pepper, allspice, ground nuts, citrus peels, spirits and chocolate. Through trial and error people figured out the compatibility of certain flavors and ingredients with the beans. They promoted their "flavored coffee recipes" through local consumption and exchange of goods and services.

Explorers, traders and merchants who traveled to and from remote foreign lands further spread the flavored coffee recipes they liked throughout their trade routes . This helped create acceptance and high demand for adding flavorings during or after brewing. Westerners added cream and sugar to enhance the flavor. Most of these natural flavorings were added to the coffee either while brewing or once it was served in the cup.

Modern food science has transformed the coffee industry by developing processes to add the flavoring to the beans well before brewing. F lavorings added to the whole beans after roasting are stronger than those added after the coffee is brewed. The reason is that the whole bean flavors need to carry through the brewing process and deliver sweetness without sugar; creaminess without cream; fragrance and aroma without overpowering the coffee beans' natural flavor, and taste fresh when served.

It is quite amazing how modern chemistry and the expertise of master roasters at specialty gourmet coffee processors are able to accomplish all this.
